Bistro Concept is where creativity, community, and great food come together. Founded in 2015 by restaurateur Christopher Przemyski, our group has become a cornerstone of Sai Ying Pun’s lively dining scene. From seafood specialties to modern European fare, our eclectic family of restaurants is united by a shared passion: to serve quality food at affordable prices, all in spaces that are as artistic as they are welcoming.

Today, Bistro Concept proudly operates five distinct venues: Flying Pig Bistro, Flying Pig Deli Social, EL Macho, Lobster Shack, and Katsumoto with exciting new ventures already on the horizon.

Meet Christopher Przemyski
A passionate food lover and seasoned hospitality professional, Christopher Przemyski’s journey started with a simple idea: to bring the flavors he loved to his adopted home of Hong Kong. After years of working in restaurants and bars, he launched Bistro Concept with a vision to create places where food, creativity, and community could thrive together.

From the very first service at Flying Pig Bistro to the opening of Katsumoto, Christopher’s dedication has never wavered. His joy comes from seeing guests enjoy the experiences his team prepares every day and their support continues to fuel the group's growth.
